Bonnat has been making chocolate in the same French town since 1884, and this bar shows why they've lasted so long. It uses a rare heirloom cacao from Chiapas, Mexico — one of the oldest cultivated varieties, prized by pre-Columbian civilizations in the region long before the Aztecs rose to power.

The beans nearly vanished. Xoconuzco's growing conditions are demanding, and over generations most farmers moved on to easier crops. Production stopped entirely by 1850. Bonnat has since revived it, working with what's still grown there and roasting it carefully to bring out flavours most chocolate simply doesn't have.

Expect something different from typical dark chocolate. There's warmth from spice, a hint of citrus, and a finish that's smoky rather than sharp. It's 75% cocoa but doesn't hit you with bitterness, more depth than punch. Vegan and gluten-free.

This comes from a company still run by the same family who started it, based in Voiron, France. They've spent decades sourcing rare cacao varieties from around the world, and this Mexican bar is often mentioned as one of their standout bars.
