Cherry with dark chocolate is a classic, and delicious, combination of flavours. These two, quite, strong flavours work well together without either one being too overpowering, red fruits work well with dark chocolate because they both contain similar flavour notes and matching these notes together properly can create some wonderful recipes.
Kirsch Cherries Covered in Chocolate
Kirsch soaked, dark chocolate covered, cherries are probably the most popular type, soaking the cherries not only makes the cherries succulent and moist but increases the cherry taste, adds brandy flavouring and gives the chocolate covered cherries a splash of alcohol.
Hotel Chocolat's Kirsch Cherries are covered in a thick layer of milk chocolate and then another layer of dark chocolate. The dark chocolate covered Morello cherries from The Chocolate Trading Company are presented in a chocolate box with twelve chocolates in and each one is foil wrapped.

Kirsch, German for "cherry", is fruit brandy made from cherries. It is double distilled to create a clear liqueur which is where it gets it proper name Kirschwasser, Cherry Water.
